How to make


Step 1: Prepare the Green Mixture
Blanch the spinach by boiling it in hot water for 2 minutes, then immediately transfer it to ice-cold water.
Blend the blanched spinach into a smooth puree.
In a bowl, mix the spinach puree with chopped coriander leaves, green chili, ginger, and curry leaves.
Step 2: Mix with the Batter
Add the green mixture to the ready-made idli batter and mix well.
Check the consistency of the batter; it should be thick but pourable. Add a little water if necessary.
If desired, add baking soda just before steaming and mix gently.
Step 3: Steam the Idlis
